Lettuce Heart Salad with Pico, Market Vegetables and Fruits

  • 50gr of Germain Pico
  • 1 Lettuce
  • Vegetables and fruits from the market
  • 1 tablespoon cider vinegar
  • 3 tablespoons of sunflower oil
  • 1 teaspoon of mustard
  • 1 small shallot finely chopped
  • 3 stalks of chervil
  • 1 sprig of lemon thyme
  • 3 Salt mill pepper

    Wash, then squeeze the salad, keeping it whole.

    Wash and peel the vegetables and fruit.

    Using a mandolin, cut the vegetables into strips so that they can be eaten raw.

    Make the vinaigrette with the vinegar, mustard and oil. Add the shallot, the chervil and the thyme previously chopped.

    Dress the salad with the vegetables and fruit, cover with vinaigrette. Serve with the pico and a good piece of bread.


You can vary your vinaigrette by adding melon, peach or other cubes! There is no limit. Present the whole salad on the table, it will amaze your guests. Ideal to share with friends.
